Burgertastic



This recipe is from Bobby Flay (Food Network)

Use 80/20 hamburger meat (fat is good when grilling). Do not place any ingredients into the meat. Pat & compact a sizable handful of meat for about 1 minute, the patty should be substantial in your hand. Set the burgers on a plate and heavily season with salt & pepper. Place the seasoned side down on a medium-heat grill. Heavily season the upside with salt & pepper. Grill for about 4 minutes per side. Once the burgers seem done, place a thick slice of Monterey cheese on each burger and grill for another 10 seconds. Place the burgers on buns (do not over gill the bun, you want the bun to remain soft so that it won't fall apart).

Balsamic Chicken

Ingredients:
1/2 c. balsamic vinegar
1/2 c. honey
1/2 c. brown sugar
1/4 c. soy sauce
5 sprigs of rosemary
1 heaping table spoon of crushed garlic
10 - 12 drumsticks sprinkle of toasted sesame seeds
1/4 c. chopped parsley

Directions:
Combine balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic in large bowl. Stir the contents until sugars (honey and brown sugar) have dissolved.

Place drumsticks into large ziplock bag and pour marinade over drumsticks. (I usually double back this in case of leakage). Place in fridge for 6 - 8 hours.

Preheat over 450 degrees F

Place chicken on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30-35 minutes.

While that is baking, place marinade in saucepan and bring to a boil (this will kill the bacteria). Reduce heat to simmer and cook over low for 15 minutes or until thick.

Use a pastry brush or BBQ brush to brush the marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with sesame seeds and parsley.

Serve.
